One-Pan Roasted Strawberries & Caramelized Onion Burrata

This one-pan roasted strawberry and caramelized onion burrata dish captures that feeling: golden evenings, breezy dinners outdoors, and the simple delight of flavors that sing when brought together.

Ingredients
1 pint strawberries, hulled and sliced
2 yellow or sweet onions, sliced into ½-inch half moons
1 medium to large ball of burrata
2 tablespoons butter, melted
2 tablespoons fresh herbs, divided (thyme, tarragon, and chives work beautifully)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
2 teaspoons maple syrup
Toasted baguette or rustic bread, for serving
Instructions
Preheat your oven to 400°F (200°C).
Prep the onions:
Slice onions into ½-inch thick half moons and place them on one half of a large baking sheet. In a small bowl, mix melted butter with 1 tablespoon of your chosen herbs. Brush this herbed butter over the onion slices.Roast the onions:
Roast for 10–15 minutes, or until the bottoms are turning golden.Prep the strawberries:
While onions are roasting, mix olive oil, balsamic vinegar, and maple syrup in a small bowl. After the first roast, flip the onions. On the other half of the baking sheet, lay down parchment paper and spread sliced strawberries in a single layer. Brush them with the balsamic-maple mixture.Roast again:
Return the pan to the oven and roast for another 10–15 minutes, until onions are soft and golden and strawberries are bubbly and caramelized.Warm the burrata:
Remove the parchment with the strawberries and stir the onions. Gently place the burrata on top of the onions and return to the oven for 2–3 minutes, just until the burrata is warmed through.Assemble & serve:
Transfer the caramelized onions to a serving dish, place the warmed burrata on top, and spoon the roasted strawberries over everything. Finish with the remaining tablespoon of fresh herbs.Serve with toasted bread and a spoon—because you’ll want every bit of this deliciousness.
